Video | Stuffed & Grilled Artichokes

Friends and family often ask Ray Ray (my dad) how he makes his artichokes because they not only resemble a beautiful work of art… they’re delicious! To share his method with you, Ray Ray patiently prepared, soaked, steamed, stuffed, baked, and grilled multiple artichokes on camera.

*Ray Ray’s Stuffed Artichokes

Ingredient list:

6 whole artichokes

3 T extra virgin olive oil

1/8 c wine (red or white) or to taste

3 oz. shrimp (any size, deveined, peeled)

3 oz. sausage

handful of olives (black, green)

3 cloves of garlic

1/4 c mozzarella cheese

1/4 c parmesan cheese

1/2 c breadcrumbs

1 t granulated garlic

1 t oregano

1 t thyme

salt & pepper to taste

 

Directions:

Preheat oven to 350 degrees

Cut and prepare artichokes for stuffing & baking (see video or directions below)

Steam for 15 minutes (see instructions below)

Prepare Stuffing by combining shrimp, sausage, olives, breadcrumbs, parmesan cheese, 2 T olive oil, granulated garlic, oregano, thyme, salt & pepper – mix thoroughly.

Take steamed artichokes and stuff completely filling inside and around leaves, reserve about 1/4 cup of stuffing for baking

Coat the bottom of a pyrex pan with 1/8 c seasoned water from steam pot, 1/8 c red or white wine, and 1 T olive oil (keeps artichokes from drying out)

Add reserved 1/4 c of stuffing – spreading evenly throughout pan

Place stuffed artichokes in pan right side up

Sprinkle mozzarella cheese, parmesan cheese, & remaining breadcrumbs on top of artichokes

Place pan in Oven – bake until cheese melts

Serve!

*Ray Ray’s Grilled Artichokes

Ingredients list:

6 whole artichokes

1 T granulated garlic

1 T oregano

1 T thyme

2 T extra virgin olive oil

salt & pepper to taste

 

Directions:

Heat grill

Cut and prepare artichokes for grilling (see video or directions below)

Steam for 15 minutes (see directions below)

Place in a bowl and season with granulated garlic, oregano, thyme, olive oil, salt & pepper

Mix thoroughly

Place each piece on the grill until you see grill marks (not long, maybe 2-3 minutes, see video)

Remove from grill

Serve!

How to Prepare Artichokes

(see video for detailed demonstration)

Cut off the stem

Remove the top 1″ of the artichoke with a serrated knife

Remove pincher leaves on the outside

Trim the bottom to get rid of hard, rough leaves and areas

How to cut Artichokes for STUFFING & BAKING

With a paring knife, trim around the purple area and thistles

Use a spoon to remove purple portion and all thistles

Soak full artichoke in Acidic Water (water with juice from any citrus fruit)

How to Cut Artichokes for GRILLING

With the top of the artichoke facing down, cut into quarters

Take each quartered piece and cut along the line between the heart and thistles to easily remove all thistles

Cut quartered piece in half

Yields 8 pieces

Soak all pieces in Acidic Water (water with juice from any citrus fruit)

1 citrus fruit (lemon, lime)

Water

How to steam whole & cut Artichokes

Using a steam pot

Fill outside portion 1/4 with water

Season water with your favorite seasonings or

Ray Ray used -chicken broth, oregano, thyme, salt & pepper, garlic cloves

Steam for 15 minutes or until you can easily stick a fork through artichoke pieces

Remove from steam pot and place in a separate bowl
