Every morning, I drink a tasty collagen protein/caffeine mixture after my morning run.
I add 1 scoop of PERK Energy with 2 scoops of Vital Proteins to cold water (or hot water, depending on weather). Then, after it’s mixed and frothy in theย Instant Milk Frother, I pour it into a cup full of ice (or a nice warm mug).
It’s become my very favorite post run breakfast and I must say, it’s PERK-fect. It includes… a boost of caffeine (100mg), my daily collagen proteins, EGCG โ a powerful antioxidant, only 2g of net carbs and no artificial sweeteners, and it not only tastes delicious but it also fills me up til lunchtime.
Anticipating the fall, I ordered the Pumpkin flavored PERK Energy that is aptly named Pumpkin Butter Pecan Latte.
While I enjoy all the PERK flavors (especially pumpkin) as a hot or cold beverage, I figured it would be fun to make another type of post run breakfast fuel.
Enter… the PERK-fect waffle!
I tried to add the least amount of extra ingredients because the drink is already pretty filling. Keeping the base of 1 scoop of Perk and 2 scoops of Vital Proteins, then add an egg ( or substitute 3 egg whites), vanilla extract, the smallest bit of almond flour (or other type of desired flour), baking powder to make it rise, and for the Pumpkin waffle – pumpkin pie spices!

PERK Energy - Pumpkin Waffles
Equipment
- 1 Large bowl
- 1 whisk
- measuring spoons/cups
- 1 Waffle Iron
Ingredients
- 1 whole egg substitute 3 egg whites or 3/8 cup (6T) liquid egg whites if desired
- 1/2 teaspoon vanilla extract
- 1 scoop Perk Energy Original Pumpkin Butter Pecan Latte
- 2 scoops Vital Proteins Collagen Peptides - unflavored collagen powder
- 1/4 cup almond flour substitute oat, coconut, or other desired flour
- 2 teaspoons pumpkin pie spice
- 1/4 teaspoon baking powder
Optional
- 1/8 cup chopped walnuts substitute nut of choice
Instructions
- In a large mixing bowl, whisk the egg.
- Add the vanilla extract to the bowl and whisk again until well combined.
- Add Perk, Vital Proteins, almond flour, pumpkin pie spice, and baking powder to the bowl, continue whisking until fully integrated.
- Scoop the batter into the center of your hot, greased waffle pan.
- Depending on waffle pan, cook until sides brown and waffle lifts easily. (approx. 3 minutes)

You can use any flavor of PERK you’d like for these waffles, I’m still shocked at how light and airy these turned out. I hope you try them yourself, and let me know when you do!
